Ingredients
1 kg potatoes, peeled and chopped into even pieces
3 teaspoons smoked paprika
2 teaspoons olive oil
2 medium onions, sliced
2 garlic cloves, crushed
2 x 400 g cans chopped tomatoes
300 g cooked and shredded chicken
140 g roasted red peppers, sliced
Handful of Kalamata olives, halved
Salt and black pepper to taste
Directions
Preheat your oven to 200°C (180°C fan / gas mark 6). Place the chopped potatoes in a large pot of salted water and bring to a boil. Cook for 15-20 minutes until the potatoes are tender and easily pierced with a fork. Drain well in a colander and return to the pot.
While the potatoes cook, heat the olive oil in a large pan over medium heat. Add the sliced onions and crushed garlic, stirring occasionally until softened, about 3-4 minutes.
Stir the smoked paprika into the onion and garlic mixture and cook for 1 minute, allowing the spice to bloom and infuse the oil.
Pour in the canned chopped tomatoes and bring the sauce to a gentle simmer. Let it cook for 5 minutes, stirring occasionally.
Mash the drained potatoes with salt, pepper, and 1 teaspoon of the paprika until creamy and smooth, adjusting seasoning to your taste.
Stir the shredded chicken, roasted peppers, and halved olives into the tomato sauce. Mix gently to combine and transfer the mixture to a large ovenproof dish. Season with additional salt and pepper as needed.
Spoon the mashed potatoes evenly over the chicken and tomato mixture, spreading it to cover the top completely.
Place in the preheated oven and bake for 15 minutes until the potato topping is golden brown and the sauce is bubbling gently around the edges. Remove from the oven and let rest for 2-3 minutes before serving.
