2 large potatoes (about 2 pounds)
8 cups ice water
1 teaspoon garlic powder
1 teaspoon onion powder
1/4 teaspoon salt
1 teaspoon ground white pepper
1/4 teaspoon allspice
1 teaspoon hot pepper flakes
1 tablespoon vegetable oil
Directions
Wash your hands with soap and water before beginning. Scrub the potatoes under cold running water to remove any dirt, then pat dry with a clean kitchen towel.
Using a sharp knife, cut the potatoes into strips approximately 1/2 inch thick and 1/2 inch wide, resembling traditional french fry size.
Place the cut potato strips into a large bowl filled with 8 cups of ice water. Cover the bowl with plastic wrap and refrigerate for at least 1 hour. This soaking removes excess starch and helps create crispier fries.
Preheat your oven to 475°F. After soaking, drain the potatoes thoroughly in a colander and pat them completely dry with paper towels or a clean kitchen towel—moisture is essential to remove for browning.
In a large plastic or ziplock bag, combine the garlic powder, onion powder, salt, white pepper, allspice, and hot pepper flakes. Mix well to blend all the seasonings evenly.
Add the dried potato strips to the bag with the spice mixture. Seal the bag and shake vigorously for about 1 minute, ensuring every piece is evenly coated with the seasoning blend.
Pour the seasoned potatoes into a bowl and drizzle with the vegetable oil, then toss gently with a spatula or wooden spoon until all pieces are lightly coated with oil.
Spread the oiled potato strips in a single layer on a nonstick shallow baking pan or baking sheet. Do not overcrowd; arrange them in a single layer so they can cook evenly.
Cover the baking pan tightly with aluminum foil and place it in the preheated 475°F oven. Bake covered for 15 minutes.
Carefully remove the aluminum foil and stir the fries, turning them over so they brown evenly on all sides. Return the pan to the oven uncovered.
Continue baking uncovered for an additional 15 to 20 minutes, stirring and turning the fries halfway through. Fries are done when they are golden brown on all sides and tender when pierced with a fork. Watch carefully toward the end to prevent burning.
Remove from the oven and transfer the fries to a serving platter. Serve hot while they are crispy on the outside and tender on the inside.
