Tuna Apple Salad Sandwich

Ingredients
1 medium apple (such as Fuji or Pink Lady)
1 12-ounce can chunk light tuna, drained
2 tablespoons low-fat plain yogurt
2 tablespoons light mayonnaise
1/2 cup raisins
1/4 cup chopped walnuts
1/8 teaspoon ground black pepper
2 tablespoons fresh chopped parsley (optional)
1/2 teaspoon curry powder (optional)
8 leaves lettuce (Bibb, Romaine, green, or red leaf)
8 slices whole-grain bread
Directions
Wash and quarter the apple. Remove the core from each quarter and finely chop the apple flesh.
In a medium bowl, combine the chopped apple, yogurt, mayonnaise, raisins, walnuts, black pepper, and optional parsley and curry powder. Stir until well blended.
Gently fold the drained tuna into the apple mixture until just combined, being careful not to break up the chunks.
Toast the bread slices if desired. Layer a lettuce leaf on each of four bread slices, then top each with an equal portion of the tuna apple salad. Cover with the remaining bread slices to form sandwiches. Cut diagonally and serve immediately.
