8 slices whole grain bread

1 can (15 oz) peaches in juice, drained

8 slices reduced-fat cheddar cheese

2 cups fresh spinach

4 teaspoons vegetable oil

Directions

  1. Heat the vegetable oil in a large non-stick skillet over medium heat until shimmering, about 1 minute.

  2. Place 4 slices of whole grain bread in the skillet, spacing them evenly.

  3. On each bread slice in the pan, layer one slice of reduced-fat cheddar cheese, followed by a small handful of fresh spinach, then 4 to 6 peach slices, another slice of cheese, and finally top with a second bread slice to form a sandwich.

  4. Cook for 4 to 5 minutes, until the bottom bread slices are golden brown and the cheese begins to melt.

  5. Carefully flip each sandwich and cook the other side for another 4 to 5 minutes, until golden brown and the cheese is completely melted.

  6. Transfer the sandwiches to a serving plate and serve warm.
