1/2 tablespoon butter

1 pear, peeled and diced

1/2 teaspoon ground cinnamon

1/4 teaspoon ground nutmeg

1 tablespoon pure maple syrup

1 cup gluten-free quick-cooking oatmeal

1 and 1/3 cups water

Directions

  1. Peel the pear and cut it into small, bite-sized pieces. Heat the butter in a small skillet over medium heat until melted. Add the diced pear pieces to the skillet and cook for about 2 minutes, stirring occasionally to coat with the butter.

  2. Sprinkle the cinnamon and nutmeg over the pears, then pour in the maple syrup. Continue cooking for 2 to 3 minutes, stirring gently, until the pears become soft and tender and the mixture has thickened slightly.

  3. While the pears are cooking, combine the gluten-free oatmeal and water in a microwave-safe bowl. Microwave on high for 60 to 90 seconds, depending on your preferred consistency—60 seconds for a thinner oatmeal or 90 seconds for a thicker texture.

  4. Divide the cooked oatmeal between two serving bowls. Top each portion with the warm maple-glazed pears and any syrup from the skillet. Serve immediately while warm.
