1 lb Ground chicken
1 tablespoon Garlic, minced
1 tablespoon Hoisin sauce
1 tablespoon Soy sauce
2 tablespoons White sugar
1 tablespoon Water
1 tablespoon Vegetable oil
Diced jalapeño
Fresh basil, torn
2 cups Cooked brown rice
Lettuce leaves, washed
Directions
Heat oil in a large skillet over medium-high heat. Add the ground chicken and cook, breaking it apart with a spoon, until browned and cooked through (no pink remains, about 7–8 minutes). Drain excess fat if necessary.
Add the minced garlic, jalapeño, hoisin sauce, soy sauce, sugar, and water to the cooked chicken. Stir well to combine all ingredients and simmer for 2–3 minutes until the flavors meld.
Remove the skillet from heat and stir in the torn fresh basil until just wilted, about 1 minute.
Fold the cooked brown rice into the chicken and basil mixture. Stir gently to combine, heating through for 1–2 minutes over low heat if needed.
To assemble, spoon the chicken and rice filling onto individual lettuce leaves. Roll or fold to enclose the filling and serve immediately, garnished with additional fresh basil if desired.
