Ingredients

3 large eggs

Kosher salt

Freshly ground black pepper

1 tablespoon unsalted butter

1 ounce grated Gruyère, cheddar, or Swiss cheese

Directions

  1. Crack the eggs into a bowl and whisk together until completely combined and uniform in color. Season with a pinch of kosher salt and freshly ground black pepper.

  2. Heat the unsalted butter in an 8-inch non-stick skillet over medium-high heat until it is melted and foaming, about 1 minute.

  3. Pour the egg mixture into the hot pan. Allow it to cook undisturbed for about 10 seconds, then use a spatula to gently push the cooked portions toward the center while tilting the pan so uncooked egg flows to the edges.

  4. Continue this gentle pushing and tilting motion for about 30 seconds, until the top is still slightly wet but the bottom is set and lightly golden.

  5. Sprinkle the grated cheese evenly over one half of the omelette.

  6. Fold the omelette in half over the cheese and slide onto a plate. The eggs should reach an internal temperature of 160°F. Serve immediately.
