Ingredients

1/2 cup butter, melted

4 cups fresh peaches, peeled and sliced

1 cup fresh blackberries

1 cup white sugar, divided

1 teaspoon ground cinnamon

1 tablespoon fresh lemon juice

1 1/4 cups all-purpose flour

2 tablespoons baking powder

1/2 teaspoon salt

1 cup milk

Directions

  1. Preheat your oven to 350°F (175°C).

  2. In a large bowl, combine the sliced peaches, blackberries, 1/4 cup of the sugar, cinnamon, and lemon juice. Toss gently to distribute the sugar and spices evenly throughout the fruit.

  3. Pour the melted butter into a 9x13-inch glass baking dish, tilting and rotating the dish to coat the entire bottom and sides with an even layer of butter.

  4. In a medium bowl, whisk together the flour, remaining 3/4 cup sugar, baking powder, and salt. Add the milk and stir until just combined—the batter will be slightly lumpy, which is correct. Do not overmix.

  5. Pour the batter evenly into the prepared baking dish, spreading it to cover the buttered surface.

  6. Spoon the fruit mixture and all accumulated juices evenly over the batter, distributing the peaches and blackberries across the entire surface.

  7. Bake for 55 to 60 minutes, until the top is golden brown and a toothpick inserted into the cake portion comes out with only a few moist crumbs. The fruit juices may bubble around the edges.

  8. Remove from the oven and let cool for 10 minutes before serving. The cobbler can be enjoyed warm or at room temperature.
