Ingredients
24 extra large shrimp, peeled and deveined
24 fresh basil leaves
24 thin bacon strips, each 6 to 7 inches long
Directions
Prepare metal or wooden skewers (if using wooden skewers, soak them in water for at least 30 minutes). For each kebab, hold a shrimp straight and insert a skewer lengthwise from the tail end through the body of the shrimp. Place a fresh basil leaf on the curved back side of the shrimp. Carefully wrap a bacon strip around the shrimp, tucking the ends under to secure. Repeat with the remaining shrimp, basil, and bacon to create 8 kebabs (3 shrimp per kebab).
Preheat your grill to high heat, setting it up for direct grilling. Allow the grates to become hot.
Place the kebabs directly on the hot grate. Position a strip of aluminum foil under the exposed portions of the skewers to protect them from charring. Grill for 1 to 2 minutes on the first side, then carefully turn the kebabs. Grill the second side for another 1 to 2 minutes until the bacon is golden brown and crispy and the shrimp are opaque and cooked through (the shrimp should reach an internal temperature of 145°F). Total cooking time is approximately 4 to 6 minutes with turning.
