Ingredients
2 cans (29 oz each) Two 1-pound, 13-ounce cans chickpeas, drained and patted dry
1 cup Olive oil
1 tablespoon Smoked paprika (sweet or hot)
4 Garlic cloves, sliced
1 Fresh thyme sprig
1 tablespoon Lemon zest, in thin strips
Coarse salt, to taste
Directions
Drain the chickpeas thoroughly and place them on a clean kitchen towel or paper towels. Pat them dry completely to remove excess moisture—this ensures crispy results when frying.
Heat the olive oil in a large skillet over medium-high heat. Once shimmering, add the sliced garlic and fresh thyme sprig. Cook for about 1 minute until fragrant, then add the smoked paprika. Stir to combine and cook for 30 seconds to bloom the spice.
Add the dried chickpeas to the hot oil. Increase the heat to high and cook, stirring occasionally, for 8–10 minutes. The chickpeas will brown and crisp up; listen for a gentle crackling sound. Stir every couple of minutes to ensure even cooking and prevent sticking.
When the chickpeas are golden brown and crispy, remove the skillet from heat. Remove and discard the thyme sprig. Season generously with coarse salt to taste.
Transfer the smoky fried chickpeas to a serving bowl and scatter the lemon zest strips over the top. Serve warm or at room temperature.
