Ingredients
1½ cup unsalted butter, cut into pieces
1 cup unsweetened cocoa powder
5 cups powdered sugar
1 tablespoon vanilla extract
¼ cup heavy cream
Directions
Cut the unsalted butter into pieces and add to a mixing bowl. Using the paddle attachment on an electric mixer, whip the butter for 5 to 7 minutes on medium speed, scraping down the sides of the bowl occasionally. The butter should become light in color and fluffy when fully whipped.
Sift the cocoa powder directly into the mixing bowl with the whipped butter. Turn the mixer to low speed and beat until the cocoa powder is completely incorporated and the mixture is uniform in color.
Add 2 cups of the powdered sugar to the cocoa-butter mixture. Mix on low speed until the sugar is fully incorporated into the frosting base.
Pour in the vanilla extract and 2 tablespoons of heavy cream. Mix on low speed until the vanilla and cream are evenly distributed throughout the frosting.
Add the remaining 2 cups of powdered sugar and beat on low speed until the sugar begins to combine. Then increase the mixer speed to medium-high and beat for 3 minutes to incorporate the sugar fully.
Add the final 1 cup of powdered sugar along with the remaining 2 tablespoons of heavy cream. Start on low speed and mix until the ingredients just begin to combine. Increase the speed to medium-high and beat for 3 to 5 minutes more, whipping air into the frosting until it reaches a light, fluffy consistency.
