Ingredients

4 tbsp unsalted butter

2 tsp sugar

2 tsp Asian fish sauce

3 cups fresh corn kernels

½ cup dried shrimp

½ cup water

salt to taste

black pepper to taste

Directions

  1. Rinse the dried shrimp under cold water to remove any debris, then set aside and coarsely chop them.

  2. In a large skillet or braising pan, melt the unsalted butter over medium heat until foaming.

  3. Add the chopped dried shrimp to the melted butter and cook for about 1 to 2 minutes, stirring occasionally, to awaken their flavor.

  4. Stir in the fresh corn kernels and mix well to coat with the buttery mixture.

  5. Add the fish sauce and sugar, stirring to combine everything evenly. Season with salt and pepper to taste.

  6. Pour in the water and bring the mixture to a gentle simmer over medium heat.

  7. Reduce heat to low, cover the pan with a lid, and braise the corn for 15 to 20 minutes, stirring occasionally, until the corn is very tender and the liquid has mostly reduced.

  8. Adjust seasoning with additional salt and pepper if needed, then transfer to a serving dish and serve hot.
