Ingredients

3-4 cups packed diced ripe mango (about 2 medium mangoes)

1 small red bell pepper, minced

1 jalapeño pepper, minced

1 shallot, minced

4 teaspoons fresh lime juice

1 teaspoon salt

Directions

  1. Add the diced mango to a food processor or high-powered blender. Process until the mixture reaches a smooth, uniform consistency, about 1-2 minutes.

  2. Transfer the puréed mango to a medium mixing bowl. Add the minced shallot, red bell pepper, and jalapeño pepper to the bowl.

  3. Pour the fresh lime juice over the mixture and stir gently to combine all ingredients until well distributed.

  4. Taste the sauce and season with salt, adjusting the amount to your preference. Stir to incorporate the salt thoroughly.

  5. Cover the bowl with plastic wrap or a lid and refrigerate until ready to serve. The sauce will keep for up to 3 days in the refrigerator.
