Ingredients
1 lb cooked, shredded chicken breast
1 ripe mango, peeled and diced
½ cup mayonnaise
¼ cup diced green onion
2 tablespoons sugar
3 tablespoons fresh basil, chopped
Salt and black pepper to taste
Directions
In a large bowl, combine the shredded chicken, diced mango, mayonnaise, green onion, and sugar. Stir until all ingredients are well blended.
Season the mixture with salt and black pepper to taste, stirring to distribute evenly.
Cover the bowl and refrigerate the chicken salad for at least 10 minutes to allow flavors to meld.
Just before serving, fold in the fresh chopped basil gently to preserve its bright flavor.
Serve on croissants, wraps, or over fresh salad greens. Store leftover chicken salad in an airtight container in the refrigerator for up to 2-3 days.
Comments
All ingredients are standard stock at any Charlotte grocer—Harris Teeter, Publix, Kroger, Walmart all carry rotisserie chicken (faster than cooking from scratch) and fresh mango year-round. At roughly $2.50 per serving for decent chicken and a medium mango, the cost is reasonable for a quick lunch. The stated 15 minutes is honest if you buy pre-cooked chicken; cooking a raw breast from scratch adds 20–25 minutes, and the recipe should specify this. It reheats adequately in the fridge for a next-day lunch, and makes enough for four without fuss, but basil-heavy mayo-based salads are forgettable once they sit—the mango softens and the dressing separates.
