½ jalapeño chile, minced

1 teaspoon fresh thyme leaves

1 pound skinless cod fillet

¾ cup panko (Japanese-style bread crumbs)

2 tablespoons light mayonnaise

2 tablespoons reduced-fat sour cream

1 bag baby spinach

Directions

  1. Preheat your oven to 400°F (200°C). Line a baking sheet with foil or parchment paper and lightly coat with nonstick cooking spray.

  2. In a small bowl, whisk together the lime zest and juice, minced green onions, parsley, jalapeño, thyme, allspice, and a pinch of salt. Set the spice mixture aside.

  3. Pat the cod fillet dry with paper towels, then cut into 8 even sticks (roughly ½-inch thick and 3–4 inches long).

  4. Place the egg white in a shallow bowl and beat lightly until foamy. Pour the panko into another shallow bowl and stir in half of the spice mixture until combined.
