Ingredients

1 teaspoon olive oil

2 boneless pork chops, 1 inch thick

Kosher salt and freshly ground black pepper to taste

2 Granny Smith apples, sliced

1 cinnamon stick

2 fresh sage leaves, minced

1 teaspoon pumpkin pie spice

1/2 cup unsweetened applesauce

1/2 cup water

Directions

  1. Set the Instant Pot to sauté mode on medium heat. Once the display shows 'hot,' add the olive oil. Place the pork chops in the pot, season lightly with salt and pepper, and sear for about 5 minutes, flipping halfway through to brown both sides.

  2. Transfer the seared pork chops to a clean plate. Add the sliced apples, cinnamon stick, minced sage, pumpkin pie spice, applesauce, and water to the pot. Stir well to combine all ingredients, then nestle the pork chops back into the liquid.

  3. Lock the lid in place and set the Instant Pot to high pressure for 10 minutes. After cooking, let the pressure release naturally for 10 minutes, then carefully perform a quick-release to vent any remaining steam.

  4. Remove the pork chops and about half of the cooked apples to a serving plate. Switch the pot back to sauté mode on medium heat. Simmer the sauce uncovered for approximately 10 minutes, stirring occasionally, until it thickens noticeably. Pour the thickened sauce and remaining apples over the pork chops and serve immediately.
