1 roma tomato, cut into ½-inch cubes

  1. Rinse the lamb belly thoroughly under cold water and pat it completely dry with paper towels. Set aside on a clean work surface.

  2. In a medium bowl, combine the salt, finely chopped rosemary, finely chopped mint, mustard powder, and garlic powder. Mix thoroughly until evenly distributed. (Using a mortar and pestle to grind the spices together enhances the flavor profile.)

  3. Coat the lamb belly generously on all sides with the prepared cure mixture, rubbing it in firmly to ensure good coverage.

  4. Place the cured lamb belly in a covered glass baking dish and refrigerate for 3 to 5 days. Turn the meat once daily to ensure even curing. The cure draws out moisture and develops the characteristic flavors.

  5. After the curing period is complete, remove the lamb belly from the refrigerator. Rinse it thoroughly under cold running water to remove excess salt and cure mixture, then pat completely dry.

  6. Heat tallow or lard in a large skillet over high heat until shimmering. Carefully place the lamb belly in the hot fat and sear for 2 to 3 minutes per side until the exterior is golden brown and crispy. The lamb should reach an internal temperature of 145°F for medium-rare doneness.

  7. Transfer the seared lamb belly to a cutting board and allow it to rest for 5 minutes before slicing.

  8. Slice the lamb belly against the grain into bite-sized pieces. Serve in crisp romaine lettuce hearts and top with fresh diced tomato.
