Ingredients
2 flour tortillas (8 inch diameter)
1/2 cup shredded pepper jack cheese
1/2 cup shredded mozzarella cheese
1 tablespoon dried basil
2 tablespoons chopped onion
2 canned pear halves, thinly sliced
2 teaspoons olive oil
Directions
Lay both flour tortillas flat on a clean work surface. On one half of each tortilla, distribute half of the pepper jack cheese, half of the mozzarella cheese, the dried basil, and the chopped onion, dividing evenly between the two tortillas.
Arrange the thinly sliced pear halves over the cheese and seasoning mixture on each tortilla.
Fold each tortilla in half to enclose the filling, pressing gently. Using a pastry brush or your fingers, lightly coat both the top and bottom surface of each folded quesadilla with olive oil.
Heat a non-stick skillet over medium-high heat. Once hot, carefully place the oiled quesadillas into the skillet and cook for 2 to 3 minutes on the first side, until the tortilla is golden brown and the cheese begins to melt. Flip and cook the other side for another 2 to 3 minutes until the cheese is completely melted and the tortilla is golden and crispy.
Transfer the hot quesadillas to a cutting board and let cool for 1 minute. Cut each quesadilla into four triangular pieces and serve immediately while warm and cheesy.
