Ingredients
8 tablespoons unsalted butter, softened
2 teaspoons reduced sodium soy sauce
1 pound beef sirloin, trimmed of gristle and cut into 1/2-inch cubes
1 medium yellow onion, diced
1 tablespoon water
Kosher salt, to taste
Freshly ground black pepper, to taste
1 tablespoon lemon juice
1 teaspoon neutral oil, such as canola or vegetable oil
4 potato rolls
Directions
In a small bowl, combine the softened butter with the reduced sodium soy sauce, stirring until well blended. Set aside.
Using a food processor or knife, process the cubed beef sirloin until finely ground into a texture resembling coarse breadcrumbs. Do not overwork the meat.
Divide the ground beef into 10 equal portions and gently form each into a patty about 1/2 inch thick. Season both sides generously with kosher salt and freshly ground black pepper. Create a small indent in the center of each patty with your thumb to prevent bulging during cooking.
Heat the neutral oil in a large skillet over medium-high heat. Once hot, carefully place the beef patties in the skillet, working in batches if necessary to avoid crowding. Cook for 3 to 4 minutes per side, until the internal temperature reaches 160°F. Transfer cooked patties to a plate and keep warm.
In the same skillet, add the diced onion and water. Cook over medium heat, stirring frequently, for 5 to 7 minutes until the onions soften and begin to caramelize.
Reduce the heat to low and stir in the soy-butter mixture along with the lemon juice. Cook gently for 1 to 2 minutes, stirring until the butter is melted and the onions are evenly coated. Adjust seasoning with additional salt and pepper to taste.
Lightly toast the potato rolls if desired. Place one beef patty on the bottom half of each roll and top generously with the warm butter-onion mixture and its sauce. Close with the top half of the roll and serve immediately.
