Ingredients
8 russet potatoes
4 cups chicken stock
1 cup coconut milk
¼ cup coconut cream
8 slices bacon
Salt to taste
Black pepper to taste
Directions
Cook the bacon slices in a large pot over medium-high heat until crispy, about 8 to 10 minutes. Remove the bacon and transfer to a plate lined with paper towels to drain. Once cooled, crumble into bite-sized pieces. Set aside 4 slices' worth of crumbled bacon for cooking and reserve the remaining 4 slices' worth as garnish.
Peel and dice the russet potatoes into 1-inch cubes.
In the same large pot (with bacon drippings), add the diced potatoes, chicken stock, coconut milk, coconut cream, and the 4 slices' worth of crumbled bacon. Stir to combine, cover with a lid, and bring to a simmer over medium heat.
Maintain a gentle simmer for approximately 55 to 60 minutes, stirring occasionally, until the potatoes are very tender and begin to break down slightly, creating a naturally thickened broth.
Season the soup with salt and black pepper to taste. Stir well to combine.
Ladle the soup into bowls and garnish each serving with the reserved crumbled bacon. Serve hot.
Comments
All ingredients are stocked at every major Charlotte grocer, making this a straightforward shop with no special stops required. The cost per serving runs around $1.50–$2.00, driven mainly by bacon and coconut products, which are reasonable at Walmart or ALDI. The 70-minute stated time is honest for simmering but assumes potatoes are already peeled; add 10 minutes if you're starting from whole potatoes. This is genuine family soup—low-fuss, forgiving of timing, and good for weeknight reheat, though the texture softens noticeably by day two.
