Ingredients

1 1/2 cups all-purpose flour

1 cup white sugar

1/2 cup unsweetened cocoa powder

1 teaspoon baking soda

1/2 teaspoon salt

5 tablespoons vegetable oil

1 teaspoon vinegar

1 teaspoon vanilla extract

1/4 cup water

2 (1 ounce) squares unsweetened chocolate, chopped

1/4 cup margarine

2 cups confectioners' sugar

1 cup miniature marshmallows

Directions

  1. Preheat your oven to 350°F (175°C). In a 9-inch square baking pan, sift together the flour, white sugar, cocoa powder, baking soda, and salt. Sift the mixture two more times directly into the pan to ensure even distribution.

  2. Create a small well in the center of the dry mixture. Pour the vegetable oil, vinegar, and vanilla extract into the well.

  3. Pour the water over the entire mixture and use a fork to blend everything together until the batter is smooth and lump-free.

  4. Bake in the preheated oven for 30 to 35 minutes, until a toothpick inserted into the center comes out clean. Remove from the oven and allow the cake to cool completely.

  5. While the cake cools, prepare the frosting: In a saucepan, combine the chopped unsweetened chocolate, margarine, and 1/4 cup water. Heat over low heat, stirring frequently, until the chocolate and margarine are completely melted and the mixture is smooth.

  6. Remove the saucepan from heat. Stir in the vanilla extract, then gradually blend in the confectioners' sugar until well combined.

  7. Gently fold the miniature marshmallows into the frosting. Spread or spoon the frosting over the cooled cake and serve.
