Ingredients

1 pound pasta (ziti, bow tie, or similar shaped pasta)

2 tablespoons vegetable oil

1/4 cup vinegar

2 teaspoons Dijon mustard

1/4 teaspoon ground black pepper

1 cup fresh basil leaves, chopped

3 large tomatoes (or use cherry tomatoes), cut into bite-sized pieces

1 cup cooked kidney beans (canned low-sodium beans, drained and rinsed, or use garbanzo or black beans)

1 cup fat-free mozzarella cheese, cubed or shredded (optional)

1/2 cup chopped walnuts (optional)

Directions

  1. Wash your hands thoroughly with soap and warm water before beginning preparation.

  2. Bring a large pot of salted water to a boil. Add the pasta and cook according to the package directions until al dente. Drain the cooked pasta in a colander and rinse with cool water to stop the cooking process. Allow it to cool completely while you prepare the remaining ingredients.

  3. In a small mixing bowl, combine the vegetable oil, vinegar, Dijon mustard, and black pepper. Whisk these ingredients together vigorously until the vinaigrette is well emulsified and homogeneous. Adjust the seasoning to your preference if needed.

  4. In a large mixing bowl, combine the cooled pasta, drained kidney beans, chopped fresh basil, and cut tomato pieces. Toss gently to distribute the ingredients evenly throughout the pasta.

  5. Pour the prepared vinaigrette over the pasta mixture and toss thoroughly until all ingredients are well coated. Ensure the dressing is distributed evenly.

  6. Cover the bowl with plastic wrap or a lid and refrigerate for at least 1 hour to allow the flavors to meld and develop. The salad can be made up to 4 hours ahead; adjust seasonings and add more vinaigrette if the pasta appears dry before serving.

  7. Just before serving, if using the optional mozzarella cheese and walnuts, add them to the chilled salad and toss gently to combine. Serve cold or at room temperature.
