Cajun Spiced Burgers

Ingredients
1½ pounds Ground beef (80% lean)
2 teaspoons Cajun seasoning
3 Scallions, white and green parts sliced
½ cup Mayonnaise
2 teaspoons Dijon mustard
1 teaspoon Hot sauce
¼ cup Fresh flat-leaf parsley, chopped
½ cup Celery stalk, finely chopped
1 medium Yellow onion, sliced into 1/4-inch rounds
1 medium Green bell pepper, sliced into 1/4-inch rings
1 tablespoon Vegetable oil
4 Sesame seed hamburger buns, split
Directions
Preheat a grill or grill pan to medium-high heat.
In a large bowl, gently combine the ground beef, Cajun seasoning, and sliced scallions. Divide the mixture into four equal portions and shape each into a patty approximately 1/2 inch thick. Make a slight indentation in the center of each patty with your thumb to prevent bulging during cooking.
In a small bowl, whisk together the mayonnaise, Dijon mustard, hot sauce, chopped parsley, and chopped celery until well blended. Set the remoulade aside in the refrigerator until ready to use.
Place the beef patties on the hot grill and cook for about 4 minutes on the first side without moving them. Flip each patty once and grill for another 4 minutes for a medium doneness (internal temperature of 160°F). While the burgers cook, brush the onion slices and bell pepper rings lightly with vegetable oil. Grill the vegetables alongside the patties for approximately 5 minutes total, turning occasionally, until they are lightly charred and tender.
Toast the split hamburger buns on the grill for about 1 minute per side until lightly golden. Place a cooked patty on the bottom bun of each sandwich. Spread a generous amount of remoulade sauce over the top of each patty. Arrange some of the grilled onion and bell pepper over the remoulade, then place the top bun on each burger.
