Ingredients

3 large boneless, skinless chicken breasts

1 bottle (12 oz) beer

2 sweet onions, peeled and roughly chopped

1 teaspoon coarse salt

1/2 teaspoon fresh ground black pepper

3/4 to 1 cup barbecue sauce (your favorite variety)

8 slider rolls

Directions

  1. Place the three chicken breasts into your slow cooker. Pour the entire bottle of beer over the chicken.

  2. Add the roughly chopped sweet onions, coarse salt, and fresh ground black pepper to the slow cooker, stirring gently to distribute the seasonings.

  3. Cover and cook on the low setting for 8 hours, until the chicken is very tender and easily pulls apart with a fork.

  4. Carefully remove the cooked chicken breasts from the slow cooker and place on a cutting board. Use two forks to shred the chicken into bite-sized pieces.

  5. Return the shredded chicken to the slow cooker and gradually stir in the barbecue sauce, starting with 3/4 cup and adding more to taste. Mix until the chicken is evenly coated.

  6. Use a slotted spoon to carefully remove the cooked onions from the slow cooker and set aside.

  7. To assemble, place a generous spoonful of the barbecue chicken mixture on the bottom half of each slider roll. Top with a small handful of the caramelized onions, then place the top of the roll in place.

  8. Serve immediately while warm.
