Asian Pork Noodles with Spinach

Ingredients
12 ounces Spaghetti, broken into 3-inch pieces
2 tablespoons Canola oil
1 pound Ground pork
3 tablespoons Garlic, finely chopped
3 tablespoons Fresh ginger, peeled and finely chopped
2 tablespoons Asian fish sauce
2 tablespoons Fresh lime juice
8 ounces Curly spinach
Salt, to taste
Black pepper, to taste
Fresh basil, chopped, for garnish
Directions
Bring a large pot of salted water to a boil. Add the broken spaghetti and cook until just tender, about 8-10 minutes. Drain and set aside.
While the pasta cooks, heat the canola oil in a large skillet or wok over medium-high heat. Add the ground pork and cook, breaking it apart with a wooden spoon, until no longer pink and cooked through (internal temperature 160°F), about 5-7 minutes.
Add the chopped garlic and ginger to the cooked pork. Stir constantly for 1 minute until fragrant.
Pour in the fish sauce and lime juice, stirring to combine with the pork mixture.
Add the spinach to the skillet and stir constantly until wilted, about 2-3 minutes.
Add the cooked spaghetti to the skillet and toss everything together until evenly combined. Season to taste with salt and pepper.
Divide among four serving bowls and garnish each portion with fresh chopped basil before serving.
