Ingredients

1 cup filtered water

1 cup raw cashews, soaked overnight and drained

1 13.5-ounce can organic coconut milk

1/2 cup raw honey

1/3 cup organic raw cacao powder

1 1/2 teaspoons organic vanilla extract

1/8 teaspoon sea salt

1/3 cup dairy-free mini chocolate chips

1/3 cup chopped macadamia nuts

Directions

  1. Add the filtered water, soaked cashews, coconut milk, honey, cacao powder, vanilla extract, and sea salt to a high-speed blender. Blend on high speed for 2 minutes until completely smooth and well combined. Transfer the mixture to a bowl and refrigerate until thoroughly chilled, at least 1 hour or until cold to the touch.

  2. While the mixture chills, combine the dairy-free chocolate chips and chopped macadamia nuts in a small bowl. Place this mixture in the freezer so the pieces are cold and firm for adding to the ice cream.

  3. Once the ice cream mixture is thoroughly chilled, pour it into your ice cream maker and churn according to the manufacturer's instructions, typically 20–25 minutes, until the mixture reaches a soft-serve consistency.

  4. During the final 5 minutes of churning, add the frozen chocolate chips and macadamia nuts, allowing the machine to gently incorporate them throughout the ice cream. Transfer to a freezer-safe container and freeze until firm, at least 2 hours, before serving.
