4 pita bread rounds
1 tablespoon extra-virgin olive oil, plus more for drizzling
2 teaspoons dried oregano
1 teaspoon coarse salt
1/4 teaspoon freshly ground pepper
8 ounces One 8-ounce block feta cheese
Directions
Preheat your oven to 400°F. Arrange the four pita bread rounds on a baking sheet in a single layer.
Brush the top surface of each pita round with the tablespoon of extra-virgin olive oil, distributing it evenly across all four pieces.
In a small bowl, combine the dried oregano, coarse salt, and freshly ground pepper.
Sprinkle the herb and seasoning mixture evenly over the oiled pita rounds.
Bake for 8 to 10 minutes until the pita bread is golden and crispy.
Remove the pita toast from the oven. Using a vegetable peeler or knife, shave thin slices of feta cheese over the warm toasted pita, or crumble the feta cheese generously onto each round.
Drizzle additional extra-virgin olive oil over the top of each pita toast and serve while still warm.
