Ingredients

1 cup self-raising flour

Pinch of sea salt

1 large free-range egg

1 tablespoon olive oil, plus extra for cooking

1 cup semi-skimmed milk

Unsalted butter for the pan

Directions

  1. In a large mixing bowl, combine the self-raising flour and a pinch of sea salt. Create a well in the center of the flour mixture.

  2. Crack the egg into the well, add the tablespoon of olive oil, and begin beating gently to incorporate the flour.

  3. Gradually whisk in the milk, stirring constantly until the mixture becomes a smooth, pourable batter with no lumps.

  4. Heat a large non-stick frying pan over medium heat and add a small knob of butter, allowing it to melt and coat the pan evenly.

  5. Once the butter is foaming and the pan is hot, drop tablespoons of batter onto the surface, spacing them apart to prevent merging.

  6. Cook each blini for approximately 1 minute until the bottom turns golden and small bubbles form on the surface. Flip and cook the other side for 1 minute until light golden.

  7. Transfer cooked blinis to a serving plate. Adjust the heat up or down as needed based on how the first batch cooks, then continue with the remaining batter.

  8. Serve the warm blinis topped with smoked salmon and your choice of garnishes, seasoning to taste.
