1 Granny Smith apple

1 1/4 cups pancake mix

1/2 teaspoon ground cinnamon

1 large egg

1 cup low-fat milk

2 teaspoons canola oil

Directions

  1. Wash your hands thoroughly with soap and water. Preheat a griddle or large skillet over medium heat and lightly coat with cooking spray.

  2. Wash the Granny Smith apple, then peel, core, and slice it into thin rings approximately 1/4 inch thick.

  3. In a large mixing bowl, whisk together the pancake mix and ground cinnamon.

  4. Create a well in the center of the dry ingredients. Add the egg, low-fat milk, and canola oil.

  5. Gently stir the mixture until just combined and evenly moist. Do not overmix; small lumps are fine. Overmixing creates tough pancakes.

  6. Place one apple ring on the preheated griddle. Pour approximately 1/4 cup of batter over the apple ring, starting from the center and spreading the batter outward to cover the apple slice completely.

  7. Cook until bubbles form across the surface of the pancake, approximately 2-3 minutes.

  8. Carefully flip the pancake and cook the other side until lightly golden brown, about 1-2 minutes. The internal temperature should reach 160°F when measured with a food thermometer. Repeat with remaining apple rings and batter.
