Ingredients
1 medium tomato, chopped into bite-sized pieces
1 medium cucumber, diced
2 cups mixed salad leaves or greens
1/2 teaspoon salt
1/4 teaspoon black pepper
1/2 teaspoon vinegar
Directions
Rinse the salad leaves and pat dry with a clean cloth or paper towel. Place them in a large mixing bowl.
Chop the tomato into bite-sized pieces and add to the bowl with the salad leaves.
Dice the cucumber and add it to the bowl.
Sprinkle the salt and black pepper evenly over the vegetables.
Drizzle the vinegar over the salad.
Gently toss all ingredients together until well combined and the dressing is evenly distributed. Divide into 4 portions and serve immediately while the vegetables remain crisp.
Comments
Every ingredient is a staple at every Charlotte grocer—tomato, cucumber, lettuce, vinegar, salt, and pepper cost under $8 total for four servings, roughly $2 per person. The stated fifteen minutes is honest; chopping takes five, dressing takes one. This is a weeknight workhorse that requires no special attention and reheats poorly but doesn't need to, since it's a same-night side or light meal that most households will eat immediately.
