Ingredients

1 loaf Italian bread

1 1/2 cups shredded mozzarella cheese

1/2 cup unsalted butter, melted

1 1/4 teaspoons garlic powder

Directions

  1. Preheat your oven to 400°F. Line a large baking sheet with parchment paper.

  2. Slice the Italian bread lengthwise to create two halves. Place both halves cut-side up on the prepared baking sheet.

  3. Brush the melted butter evenly over the cut surfaces of both bread halves.

  4. Sprinkle the garlic powder evenly over the buttered bread. Cover loosely with aluminum foil to prevent excessive browning.

  5. Bake for 10 to 12 minutes until the bread is lightly toasted. Remove the foil carefully.

  6. Top each bread half with the shredded mozzarella cheese, dividing evenly. Return to the oven for 2 to 4 minutes until the cheese melts and becomes bubbly and golden.

  7. Remove the baking sheet from the oven and carefully transfer the bread to a cutting board.

  8. Let the bread cool for a few minutes before slicing into portions and serving warm.

This is a genuinely easy weeknight side that checks boxes for Charlotte cooks. Italian bread, mozzarella, butter, and garlic powder are stocked at every major chain here—Harris Teeter, Food Lion, Publix, Walmart, ALDI, and Kroger all carry these without exception, and costs run about $0.75 to $1.25 per serving depending on cheese quality and bread brand. The 20-minute timing is honest if you're starting with a cold oven and slicing the loaf; assembly takes five minutes flat. It reheats reasonably well in a warm oven, though the crust will firm up slightly. The only drawback is that this is a straightforward side dish requiring no real technique and no adaptation to local or seasonal ingredients, which makes it reliable but unremarkable for meal planning.
