Ingredients

1/4 cup balsamic vinegar

2 tablespoons olive oil

3 cloves garlic, pressed

1/2 teaspoon dried oregano

1/2 teaspoon dried basil

Kosher salt and freshly ground black pepper, to taste

1 pound cremini mushrooms, cleaned and trimmed

2 tablespoons chopped fresh parsley leaves, for garnish

Directions

  1. Preheat your oven to 425°F. Lightly oil a baking sheet or coat it with nonstick cooking spray. In a large mixing bowl, whisk together the balsamic vinegar and olive oil. Add the pressed garlic, dried oregano, and dried basil, then season generously with kosher salt and freshly ground black pepper to your liking.

  2. Add the cleaned cremini mushrooms to the bowl and gently toss to coat them evenly with the marinade. Let the mushrooms sit at room temperature for 10 to 15 minutes, allowing them to absorb the flavors of the vinegar and herbs.

  3. Thread the marinated mushrooms onto wooden or metal skewers, dividing them evenly. Arrange the filled skewers on the prepared baking sheet in a single layer.

  4. Place the baking sheet in the preheated oven and roast for 15 to 20 minutes, until the mushrooms are tender and the edges begin to caramelize. The mushrooms should be easily pierced with a fork when fully cooked.

  5. Remove the kabobs from the oven and transfer them to a serving platter. Garnish with the fresh chopped parsley and serve immediately while still warm.
