Cold-Brew Iced Coffee Concentrate

A smooth, naturally sweet cold-brew concentrate made by steeping coarsely ground coffee in cold water overnight. This concentrate can be stored for up to two weeks and mixed with milk or water to create refreshing iced coffee drinks on demand.

Ingredients
12 ounces coarsely ground coffee
7 cups cold water
milk, for serving (optional)
Directions
Add the coarsely ground coffee to a large container. Pour the cold water over the grounds gradually while stirring gently to ensure all coffee is completely saturated. Cover the container loosely with cheesecloth and let it sit undisturbed at room temperature for 15 hours.
After 15 hours, remove the cheesecloth and place it into a fine-mesh sieve set over a large pitcher. Carefully pour the coffee mixture through the cheesecloth-lined sieve into the pitcher without stirring. Set the original container aside to rinse, then discard the cheesecloth and the spent coffee grounds.
Line the same fine-mesh sieve with a large coffee filter and position it over the rinsed original container. Pour the strained coffee from the pitcher through the filter into the container. Allow the coffee to drip through slowly—this may take up to 45 minutes. Do not stir or agitate, as this may cause the concentrate to become cloudy. Once complete, cover the container and refrigerate.
To serve, fill a glass with ice. Pour 1 part of the cold-brew concentrate into the glass and dilute with 1 part cold milk (or water, if preferred). Stir to combine and enjoy. The concentrate keeps refrigerated for up to 2 weeks.
