1 pound sirloin round steak
3 cups beef broth
1 onion, chopped
1 tablespoon butter
2 tablespoons cornstarch
3 tablespoons cold water
2 cups uncooked rice
4 cups water for rice

Directions
Cut the sirloin round steak into 1-inch cubes and set aside.
Heat a medium saucepot over medium heat and add 1 tablespoon of butter, allowing it to melt.
Add the cubed beef and chopped onion to the pot. Cook, stirring frequently, until the beef is lightly browned on all sides, about 5–7 minutes.
Pour in the beef broth and bring the mixture to a boil. Reduce the heat to low, cover the pot, and simmer for about 1 hour until the beef is very tender.
While the beef simmers, prepare the cornstarch slurry by whisking together the cornstarch and 3 tablespoons of cold water in a small bowl until smooth and fully dissolved.
Slowly pour the cornstarch mixture into the simmering beef and broth, stirring constantly to avoid lumps. Continue cooking for 2–3 minutes until the gravy thickens. If additional thickening is needed, add more of the cornstarch mixture in small amounts.
For the rice, bring 4 cups of water and 2 tablespoons of butter to a boil in a separate pot. Add the uncooked rice, stir once, then reduce the heat to low. Cover and simmer for about 15–20 minutes until the water is mostly absorbed and the rice is tender.
To serve, divide the cooked rice among four bowls or plates and top with the beef tips and gravy.
