Ingredients
4 (6 x 6 inch) pieces thin salted matzo
4 large eggs
2 tablespoons butter
Salt and pepper to taste
Directions
Break each piece of matzo into bite-sized pieces and place in a bowl. Pour water over the matzo pieces just until they are covered, allowing them to soak for 1–2 minutes until softened but still holding their shape.
Drain the matzo thoroughly in a colander, pressing gently to remove excess water.
In a separate bowl, crack the eggs and beat them together until well combined. Season the beaten eggs with salt and pepper to taste.
Add the drained matzo pieces to the beaten eggs and stir to combine, ensuring all the matzo is coated with egg.
Heat the butter in a large skillet over medium-high heat. Once the butter is foamy and hot, pour in the matzo and egg mixture.
Cook, stirring gently and frequently with a spatula, for 8–10 minutes until the mixture is cooked through (eggs should reach 160F internal temperature), golden, and crispy in places. Adjust seasoning as needed.
Transfer to a serving platter and serve immediately while hot.
