1 cup fresh cloudy apple juice

3/4 to 1 cup caster sugar

2 tablespoons fresh Moroccan mint, chopped

2 limes Juice of 2 fresh limes

4 cups cold water

Fresh mint leaves for garnish

Lime wedges for garnish

Directions

  1. In a large pitcher, combine the apple juice and cold water, stirring to blend evenly.

  2. Add the caster sugar to the pitcher and stir until fully dissolved. Taste and adjust sweetness as desired, using up to 1 cup sugar if preferred.

  3. Press and release the chopped fresh mint between your fingers to release its essential oils, then add it to the pitcher and stir gently.

  4. Squeeze the juice from both limes and pour into the pitcher, stirring well to distribute.

  5. Chill for at least 30 minutes, or until ready to serve.

  6. Strain the mint particles if desired for a clearer cooler, or leave them in for more intense flavor.

  7. Pour into glasses filled with ice and garnish with fresh mint leaves and lime wedges. Serve immediately.
