Ingredients
500 g Carrots, roughly chopped
2 large Large leeks, roughly chopped
1 whole Lemon
2 tbsp Clear honey
4 large Boneless skinless chicken breasts
50 g Watercress, roughly chopped
1 to serve Lemon wedges, for serving
Directions
Place the chopped carrots into a large saucepan filled with water and bring to a boil over high heat. After 10 minutes, add the chopped leeks and continue boiling for another 15 minutes until both vegetables are very tender.
While the vegetables cook, preheat your grill to high heat. Zest the lemon, then cut and squeeze 1 tablespoon of juice from it. In a small bowl, combine the honey with the lemon zest and juice.
Brush half of the honey-lemon glaze over the underside of each chicken breast. Arrange the chicken glazed-side up on a foil-lined baking tray and place under the grill for 5–6 minutes.
Carefully flip the chicken breasts over and brush the top surface with the remaining honey-lemon glaze. Grill for another 5–6 minutes until the chicken is cooked through with an internal temperature of 165°F, gently rolling it in the caramelized honey on the tray so it develops a rich golden glaze.
Drain the cooked carrots and leeks thoroughly. Roughly mash them together in a bowl until you reach a chunky consistency. Season to taste with salt and pepper, then stir in the chopped watercress and let it wilt from the residual heat.
Divide the vegetable mash among four serving plates. Place a glazed chicken breast on top of each portion and serve immediately with lemon wedges on the side.
Comments
Glazed Chicken over Winter Mash is a streamlined weeknight dish that works well for North Carolina tables, but the real prep time runs closer to 50 minutes once you account for trimming and cleaning the leeks and watercress, which are often sandy. Ingredient availability is solid across Charlotte chains—carrots, chicken, lemon, and honey are standard finds at Harris Teeter, Food Lion, Publix, Walmart, ALDI, or Kroger—and cost per serving lands around $4 to $5 per person, kept honest by the reliance on affordable proteins and root vegetables. The dish reheats reasonably well, which matters for weeknight leftovers, though the watercress garnish is best added fresh. Watch for leeks that still hold grit in the layers; a thorough rinse between the rings saves disappointment at the table.
