Ingredients

2 tablespoons plus 1 teaspoon peanut oil, divided

1 tablespoon curry powder

2 medium onions, sliced (about 4 cups)

2 teaspoons minced garlic

2 large sweet potatoes (about 2 pounds), peeled and cut into chunks

2 cups low-sodium chicken broth

1 (28-ounce) can whole tomatoes, drained and quartered

1 pound ground turkey

1 teaspoon salt, divided

1/4 teaspoon black pepper

1/4 teaspoon cayenne pepper

1/2 cup chunky peanut butter

1/2 cup coconut milk

Directions

  1. Heat 2 tablespoons of peanut oil in a large Dutch oven or stockpot over medium-high heat. Sprinkle the curry powder into the hot oil and stir constantly for 1 minute until fragrant. Add the sliced onions and cook, stirring occasionally, for about 2 minutes until they begin to soften. Stir in the minced garlic and cook for 1 additional minute.

  2. Add the sweet potato chunks, chicken broth, and drained tomatoes to the pot. Stir well to combine. Bring the mixture to a boil, then reduce heat to medium-low, cover partially, and simmer for 20 to 30 minutes until the sweet potatoes are very tender.

  3. While the soup is simmering, heat the remaining 1 teaspoon of peanut oil in a large skillet over medium-high heat. Add the ground turkey and cook, breaking it apart with a wooden spoon as it cooks, until no pink remains and it is cooked through (about 7-10 minutes). Season the cooked turkey with 1/2 teaspoon of salt and 1/4 teaspoon of black pepper. Transfer the turkey to a plate lined with paper towels to drain any excess oil.

  4. Stir the cooked ground turkey, remaining 1/2 teaspoon salt, cayenne pepper, peanut butter, and coconut milk into the simmering soup. Stir thoroughly until the peanut butter and coconut milk are fully incorporated and the mixture is well combined.

  5. Bring the soup back to a gentle simmer and cook uncovered for 20 minutes, stirring occasionally to ensure the flavors blend together. The soup is ready to serve when all ingredients are heated through and well combined.
