Ingredients

1 pound boneless chicken breasts or thighs, trimmed of excess fat

1½ to 2 cups low-sodium chicken broth

¼ cup fresh lemon juice

1 tablespoon garlic-infused vinegar

2 teaspoons lemon pepper seasoning

2 to 3 whole fresh lemons, sliced into ¼-inch rounds

Sea salt to taste

Directions

  1. Pat the chicken pieces dry and season both sides generously with lemon pepper and a pinch of sea salt. This seasoning foundation will infuse flavor throughout the cooking process.

  2. Place the seasoned chicken pieces in a single layer on the bottom of a heavy skillet or shallow cooking vessel with a fitted lid.

  3. Pour the lemon juice and garlic-infused vinegar directly over the chicken, then pour in the chicken broth until the chicken is completely submerged in liquid. Arrange the fresh lemon slices in an overlapping pattern on top of the chicken pieces.

  4. Cover the skillet with the lid and bring the liquid to a boil over medium-high heat, which should take about 8-10 minutes.

  5. Once the liquid reaches a rolling boil, immediately reduce the heat to low and let the chicken simmer gently for exactly 2 minutes. Do not exceed this time.

  6. Remove the skillet from the heat while keeping the lid in place. Allow the chicken to rest undisturbed for 15 to 20 minutes. This residual heat will gently finish cooking the chicken to an internal temperature of 165°F (74°C), ensuring it is moist and tender.

  7. Carefully remove and discard the lemon slices from the top of the chicken. Transfer the cooked chicken to serving plates or a platter, spooning some of the poaching broth over the top.

  8. Serve the poached chicken alongside roasted vegetables and rice of your choice, drizzling additional warm broth over the entire plate if desired.
