Ingredients

1/4 cup expeller-pressed canola or coconut oil

1/2 cup honey

3/4 cup creamy peanut butter

1 package (12 oz) silken tofu

1 tsp vanilla extract

1/8 tsp fine salt

1 (9-inch) baked pie crust

Directions

  1. Add the oil, honey, peanut butter, silken tofu, vanilla extract, and salt to a high-powered blender. Blend on high speed for about 30 seconds to 1 minute, until the mixture is completely smooth and creamy, scraping down the sides as needed.

  2. Pour the blended peanut butter mixture into the baked pie crust, spreading it evenly with a spatula.

  3. If desired, decorate the top with chocolate shavings, chocolate curls, or cacao nibs.

  4. Cover the pie loosely with plastic wrap or place it in a freezer-safe container and freeze for at least 2 hours, until firm.

  5. Before serving, remove the pie from the freezer and let it sit at room temperature for about 10 minutes to soften slightly, then slice and serve.
