1 pound bittersweet or semisweet chocolate, chopped and divided

12 tablespoons butter, at room temperature

2 /3 cup brown sugar

2 large eggs

2 cups all-purpose flour

2 /3 teaspoon baking soda

1 tablespoon freshly ground black pepper

Directions

  1. Preheat your oven to 350°F (175°C). Line baking sheets with parchment paper or silicone baking mats.

  2. Chop the chocolate and set aside half of it for folding into the dough. Melt the remaining half in a microwave-safe bowl in 30-second intervals, stirring between each interval, until smooth. Let cool slightly.

  3. In a large mixing bowl, cream together the room-temperature butter and brown sugar until light and fluffy, about 2–3 minutes of beating.

  4. Beat in the eggs one at a time, then stir in the slightly cooled melted chocolate until well combined.

  5. In a separate bowl, whisk together the flour, baking soda, and freshly ground black pepper.

  6. Fold the dry ingredients into the wet ingredients until just combined. Gently fold in the reserved chopped chocolate pieces.

  7. Drop rounded tablespoons of dough onto the prepared baking sheets, spacing them about 2 inches apart.

  8. Bake for 10–12 minutes, until the edges are set but the centers still appear slightly underbaked. The cookies will continue to firm up as they cool.

  9. Remove from the oven and allow the cookies to cool on the baking sheet for 5 minutes, then transfer to a wire rack to cool completely.
