Ingredients

8 slices Thick bacon slices

8 slices Best-quality white bread, sliced 1/2-inch thick

2 tablespoons Extra-virgin olive oil

4 whole Large eggs

Salt and freshly ground pepper

4 tablespoons Harissa

¼ cup Fresh cilantro leaves

Directions

  1. Cook the bacon slices in a large skillet over medium-high heat until crispy, about 8-10 minutes. Transfer to a paper towel-lined plate to drain.

  2. Toast the bread slices in a toaster or on a dry skillet until golden and lightly crispy on both sides.

  3. Add the olive oil to the skillet (with bacon grease if needed for flavor). Heat over medium-high heat until shimmering. Crack the eggs into the pan and cook until the whites are set and the yolks reach an internal temperature of 160F, about 3-4 minutes, or until cooked to your preference. Season with salt and pepper.

  4. Spread 1 tablespoon of harissa on each of four toasted bread slices.

  5. Top each harissa-spread slice with 2 bacon slices and 1 cooked egg. Garnish with fresh cilantro leaves.

  6. Top with the remaining toasted bread slices and serve immediately.
