Ingredients
1¼ cup plain Greek yogurt
2 tablespoon extra-virgin olive oil
8 ounce feta cheese
⅓ cup pepperoncini peppers, drained
extra-virgin olive oil for serving
Directions
Place the Greek yogurt and feta cheese in a food processor.
Add the 2 tablespoons of olive oil to the processor.
Pulse the mixture until the feta is broken down and the ingredients are combined, but retain some texture—the dip should not be completely smooth.
Fold in the drained pepperoncini peppers with a spatula until evenly distributed throughout the dip.
Transfer the dip to a serving bowl and drizzle additional olive oil on top.
Serve immediately with vegetables, pita chips, or crackers.
Comments
Feta, Greek yogurt, and pepperoncini are all stocked at Harris Teeter, Food Lion, and Kroger banners, so no special stops required for a Charlotte kitchen. At roughly $3 for Greek yogurt, $4 for feta, $2 for pepperoncini, and $6 for decent olive oil, you're looking at about $1.25 per serving—solid for an entertaining dip. The five-minute claim is honest; blending or whisking takes no longer. This works well for parties or boards but is only good the night of, since the texture dulls after a day and reheating defeats the purpose of a cold dip.
