Ingredients
1½ lb. beef stew meat, cut into 1-inch cubes
1 tsp. Cajun seasoning
2 tbsp. fresh dill, finely chopped (or 2 tsp. dried dill)
½ c. water
½ c. plain reduced-fat yogurt
1 c. frozen green peas
2 c. cooked noodles or rice, for serving
Directions
Place the beef stew meat into your slow cooker. Lightly sprinkle the Cajun seasoning evenly over the meat, using about 1 teaspoon total.
Add the chopped fresh dill and water to the slow cooker, stirring gently to combine the ingredients.
Cover the slow cooker and cook on low heat for 6 hours, or until the beef is very tender and easily pulls apart with a fork.
About 30 minutes before you are ready to serve, stir the plain yogurt and frozen green peas into the beef mixture until well combined.
Continue cooking on low heat for the remaining 30 minutes, allowing the peas to heat through and the yogurt to warm gently without breaking.
Serve the tangy beef mixture over warm cooked noodles or rice.
