Herby Cheese Roast Chicken with Baked Tomatoes

Ingredients
1 whole free-range chicken (approximately 1.5–2 kg)
150 g garlic and herb soft cheese
1 tablespoon olive oil
500 g small vine tomatoes
Directions
Preheat the oven to 190°C (fan 170°C or gas mark 5).
Gently loosen the skin over the chicken breasts by sliding your fingers between the skin and meat, being careful not to tear it.
Spread the garlic and herb soft cheese evenly under the loosened skin, working it across the breasts and down toward the legs with your fingers to ensure it covers the meat completely.
Place the prepared chicken breast-side up in a roasting tin.
Drizzle the olive oil over the chicken, then transfer to the preheated oven and roast undisturbed for 1 hour and 20 minutes, until the internal temperature reaches 165°F at the thickest part of the thigh.
Remove the chicken from the oven and transfer it to a cutting board. Let it rest for 20 minutes.
While the chicken rests, add the vine tomatoes to the roasting tin and toss them gently with the pan juices and rendered fat.
Return the tin to the oven for the remaining cooking time (until the chicken has finished its 20-minute rest), allowing the tomatoes to become soft and slightly caramelized.
Carve the rested chicken into pieces and arrange on a serving platter with the baked tomatoes. Drizzle with the warm pan juices and serve alongside fresh green salad.
