This comforting dish combines ground cumin and coriander with fresh ginger and garlic, simmered until tender and creamy. Ingredients

2 tablespoons Toovar dal

2 tablespoons Ghee or clarified butter

1 teaspoon Cumin seeds

3 Green chilies, finely chopped

¼ tablespoon Ginger paste

¼ tablespoon Garlic paste

½ teaspoon Dried fenugreek leaves (Kasoori methi)

½ cup Tomatoes, finely chopped

¼ teaspoon Turmeric powder

1 teaspoon Chili powder

½ teaspoon Cumin powder

1 teaspoon Coriander powder

½ teaspoon Garam masala

2½ cups Water

Salt to taste

2 tablespoons Yogurt

Fresh cilantro leaves, finely chopped

Directions

  1. Rinse the toovar dal under running water until the water runs clear. Place in a bowl and cover with enough water to soak for 1 hour. Drain well before using.

  2. Heat ghee in a pressure cooker over medium heat. Once hot, add cumin seeds and wait for them to splutter and become fragrant, about 30 seconds.

  3. Add the chopped green chilies, ginger paste, garlic paste, and dried fenugreek leaves. Mix well and cook for 3 to 4 minutes, stirring occasionally, until the mixture becomes fragrant and the green chilies soften.

  4. Add the chopped tomatoes, turmeric powder, chili powder, cumin powder, coriander powder, and garam masala. Mix well to combine all spices evenly.

  5. Cook for another 3 minutes, stirring frequently to prevent spices from sticking to the bottom of the cooker.

  6. Add the drained soaked dal, water, and salt to taste. Stir well to combine all ingredients.

  7. Close the pressure cooker lid securely and place the weight or whistle on top. Turn the heat to high.

  8. Allow the pressure cooker to whistle 3 times, then reduce the heat to medium and let it whistle 1 more time.

  9. Remove from heat and allow the pressure to release naturally. Once all pressure has escaped, carefully open the lid.

  10. Stir in the yogurt immediately and mix well to prevent it from curdling.

  11. Garnish with fresh chopped cilantro and serve hot.
