2 pounds Bone-in, skin-on chicken pieces
1 cup Buttermilk
1 tablespoon Hot sauce
Kosher salt
Black pepper
2 cups All-purpose flour
Canola oil for frying
Directions
Pat the chicken pieces dry with paper towels and place them in a large bowl. Season lightly with kosher salt and black pepper.
Pour the buttermilk into the bowl with the chicken, then add the hot sauce. Stir gently to combine and coat all the chicken pieces evenly. Cover the bowl and refrigerate for at least 2 hours, or up to overnight.
Place the all-purpose flour in a shallow dish or bowl. Season the flour generously with kosher salt and black pepper, stirring to combine.
Heat canola oil in a large heavy-bottomed pot or Dutch oven to 350°F. Use a thermometer to monitor the temperature; it is important for both food safety and even cooking.
Remove each chicken piece from the buttermilk mixture, allowing excess liquid to drip back into the bowl. Dredge the chicken thoroughly in the seasoned flour, coating all surfaces, and shake off any excess.
Carefully place the floured chicken pieces into the hot oil, working in batches to avoid overcrowding the pot. Do not drop the chicken from too high, as hot oil can splash.
Fry the chicken for 12 to 15 minutes, turning pieces halfway through cooking, until the exterior is deep golden brown and the internal temperature reaches 165°F when measured with a meat thermometer inserted into the thickest part without touching bone.
Transfer the cooked chicken to a wire rack set over paper towels to drain excess oil. Keep finished pieces warm while you fry the remaining batches.
