Blueberry Lemon Chia Seed Protein Bars

Ingredients
1 cup Almond milk
2 tablespoons Chia seeds
¼ cup Applesauce, unsweetened
1 teaspoon Baking powder
½ cup Fresh blueberries
1 Egg, large
1 lemon, juiced Fresh lemon juice
½ cup Rolled oats
¼ teaspoon Sea salt
1 teaspoon Vanilla extract
½ cup Vanilla casein protein powder
½ cup Vanilla whey protein powder
Nonstick cooking spray
Directions
In a small bowl, combine the almond milk and chia seeds. Stir to combine, then place the bowl in the refrigerator for about 30 minutes to allow the chia seeds to absorb the liquid. While the mixture is soaking, preheat your oven to 350°F.
In a large mixing bowl, whisk together the rolled oats, vanilla casein protein powder, vanilla whey protein powder, baking powder, and sea salt until evenly distributed.
Remove the chia seed mixture from the refrigerator. Add the soaked chia mixture, applesauce, egg, lemon juice, and vanilla extract to the dry ingredients. Fold gently until all ingredients are just combined, being careful not to overmix. Fold in the blueberries last.
Spray a medium baking pan with nonstick cooking spray. Pour the batter evenly into the pan and smooth the top.
Bake for 10 minutes. The bars will appear slightly underbaked on top—this is intentional to keep them moist and chewy. Remove from the oven and immediately transfer the entire pan to the refrigerator to cool completely.
Once fully cooled, cut into 8 equal bars. Store in an airtight container in the refrigerator. Consume within a few hours if not refrigerated, or store in the fridge for longer storage.
