Curried Honey Roast Chicken

Ingredients
1 whole roaster chicken (6-7 lbs)
1/3 cup extra virgin olive oil
1/3 cup honey
1 teaspoon garam masala curry
1/4 teaspoon kosher salt
1/4 teaspoon ground cayenne pepper
1 large yellow onion, cut into 6 wedges
1/4 teaspoon garlic powder
Directions
Preheat your oven to 425°F. Pat the chicken dry inside and out using paper towels, ensuring the skin is completely dry for even browning.
In a small bowl, combine the olive oil, honey, garam masala, kosher salt, cayenne pepper, and garlic powder. Whisk the mixture together until the spices are evenly distributed and the honey is fully incorporated.
Place the chicken in a large roasting pan with the breast side up. Rub half of the curry-honey mixture inside the cavity of the chicken, coating the interior thoroughly.
Rub the remaining curry-honey mixture all over the exterior of the chicken, working it under the skin and into any crevices. Make sure the entire surface is evenly coated.
Arrange the onion wedges around the chicken in the roasting pan. They will roast alongside the chicken and absorb the flavorful drippings.
Place the roasting pan in the preheated oven. Roast for 1 hour and 30 minutes, or until the internal temperature of the thickest part of the thigh reaches 165°F when measured with a meat thermometer.
Remove the pan from the oven and allow the chicken to rest for 10 minutes before carving. The resting period allows the juices to redistribute throughout the meat.
Carve the chicken into portions and serve hot with the roasted onion wedges and pan drippings.
