A quick and vibrant Spanish-inspired dish featuring warm sardines sautéed with garlic, red chilli, and bright lemon zest, served over toasted brown bread with fresh parsley. Ready in just 10 minutes, this light and flavorful meal is perfect as a simple main course.

Ingredients

1 tablespoon olive oil

1 garlic clove, minced

1 red chilli, deseeded and minced

1 lemon, zest and juice

2 cans (120g each) sardines in oil, drained

4 slices brown bread

½ small bunch fresh parsley, chopped

Directions

  1. Heat the olive oil in a frying pan over medium heat. Once shimmering, add the minced garlic clove and minced red chilli, stirring constantly for about 1 minute until fragrant. Add the lemon zest and cook for another 30 seconds.

  2. Gently add the drained sardines to the pan, stirring carefully to combine them with the oil and aromatics. Warm through for 2–3 minutes, stirring occasionally, until the sardines are heated through.

  3. While the sardines warm, toast the brown bread slices until golden and crispy.

  4. Remove the sardine pan from heat. Fold in the chopped fresh parsley and squeeze fresh lemon juice to taste over the mixture.

  5. Divide the warm sardine mixture evenly between the four slices of toasted bread and serve immediately.
